Today is Day 7 that I’ve been on the South Beach Diet so I figured I’d post my menu from the past week. I know the food choices are quite small or at least not what I’d normally grab for so I figured it might spark some ideas for others on this diet. I am also drinking tons of water which helps keep you feeling full. I used the convection oven at 450 to make the squash in the photo.) strip butternut press with vegetable peeler cut off ends and cut squash into cubes about 1 inch form. Put squash in plastic bowl and toss with olive oil salt spice and 1 tsp alter mixture. Stir come up to get oil and spices evenly distributed on cut surfaces of the press. Spray roasting pan with olive oil or nonstick spray and arrange squash in a hit layer. Roast about 40-50 minutes turning every 15 minutes or so.
